WHAT YOU CAN EXPECT
This is a fragrant medium roast, with dried apple being my first scent and a hint of cinnamon spice as the cup cools. For those with less sensitive palates – this is a highly enjoyable cup of coffee with balanced sweetness, primarily with notes of caramel and brown sugar. An everyday drinker that will be a beautiful complement to your daily ritual.
ORIGIN STORY
Our LEGACY SERIES highlights coffees produced in family-owned farms. Today, El ParaĂso is owned and operated by Wil Edilberto Armijo.
Wil’s journey with coffee began early – as a child, he watched and ultimately worked with his father and grandfather’s farms in Yaro. ~30 years ago, Wil and his wife moved to the Santa Barbara region and opened a general store. Shortly after opening the general store, they seized an opportunity to buy land in San Jose de los Andes, allowing Wil to return to his family’s roots in coffee growing.
El ParaĂso is located 1,550 meters above sea level near the village of San Jose de los Andes in western Honduras. The farm spans just over 12 hectares, with 8 planted in coffee. Wil also built his own wet mill, where he processes coffee on-site - from de-pulping and fermenting, to drying. The farm and these beans are a testament to Wil’s family’s rich history in and care for coffee.
The coffee is part of Coffee Shrub’s direct trade buying program called “Farm Gate.” Through this program, Coffee Shrub is committed to paying coffee producers premium prices for quality coffee. Farm Gate guarantees prices that are 50% over Fair Trade (FT) pricing; oftentimes prices are 100%+ more than FT minimums.
