WHAT YOU CAN EXPECT

I’m taking this one to a medium-dark roast (dark side of medium, light side of dark - potato, potahto!), making for a delicious everyday coffee with flavors reminiscent of mexican-spiced cocoa. For the more adventurous/whimsical home brewers, this roast is the perfect base for your homemade cafe de olla! For the rest of us (the majority of us ;)), this brew will pair easily with a splash of your favorite milk, be EXTRA tasty with some half and half, or be a smooth crushable cup of black coffee to start your day. Sometimes you just want something simple, chocolate-y, and warm in your mug. This is that coffee.

ORIGIN STORY

Our LEGACY SERIES celebrates single-origin coffees produced in family-owned farms. El Rosario, is nestled in the southern Sierra Madre de los Chiapas range in Mexico, and is managed by Victor Abel Alvarado Diaz. Victor has been a coffee producer for 15 years. He grew up working the land with his father, who also dedicated his life to coffee farming before ultimately passing the torch (and family plot) off to Victor. Today, the two work hand in hand on this family coffee operation. The Chiapas Highlands are rich in rainfall and nutritious soil, and the diverse microclimates are known for being home to exceptional specialty coffee. This specific microlot of organic & fair trade-certified coffee was grown on Victor’s 8-hectare farm - the beans are a beautiful showcase of what the Chiapas region has to offer.

Our Legacy Series shines a light on coffee from family-owned farms. Beans featured in this series come from family farms that have been passed down for generations, and others that may just be getting started. With each roast, we feature one farm/one family at a time, giving each the spotlight they deserve. Growing coffee takes tremendous skill, physical strength, mental fortitude, and just the right amount of luck. Layer on top of that: high production costs and volatile market prices, thin (or negative) margins in a global supply chain that has traditionally never prioritized its growers, and the pressure of providing for your family. The Legacy Series is about passion, hard work, resilience, and grit. True legacies aren’t born, they’re cultivated.
